Ciabatta & Spanish Chorizo Pork Sausage Sandwich

This week's creation was our delicious, vibrant sausage buns with our 100% homemade sausages with the help of our Mad Millie Fresh Sausage Kit. Check out how we made our main ingredient "Spanish Chorizo Pork Sausage" first:
 
 

Now that you have beautiful tasting sausages, this part takes 5-10 minutes. 
 
Ingredients: 
6 Small Sausages
6 Ciabatta Buns 
1 Cup of Coleslaw 
1/2 Cup of Chargrilled Capsicum with Lemon & Tahini Hummus. 
1/3 Cup of Pumpkin Seeds
2 Avocados sliced
Equipment:
Chopping board 
Bread Knife 
Knife

Step 1: Cook Spanish Chorizo Pork Sausages as per tips from the instructional video and booklet.
Step 2: Cut the buns in half. 
Step 3: Layer the filling with coleslaw, sausage, hummus, pumpkin seeds (TIP: if you sprinkle onto the hummus they shouldn't fall out) and avocado. 
Step 4: Serve and enjoy!

What weights of pork and pork fat do you recommend?

For this recipe we used 800g of lean pork and 200g of pork fat.
