Chocolate Sourdough Hot Cross Buns with Cinnamon & Maple Butter

Ingredients: 

2 Cups of High Grade Flour 
1/4 Cup of Cocoa 
1 Sachet of Mad Millie Sourdough Culture 
1 Tsp of Cinnamon 
1/2 Cup of Sugar 
200g of Chocolate Buttons 
100g Softened Butter
1 Cup of 30°C Water
Equipment: 

Mixing Bowl 
Dough Whisk 
Muslin Cloth 
Baking Paper 
Dough Scraper 
Baking Tray 
Flour for Folding and Shaping
White Cross: 
1/2 Cup of Flour 
Enough water to get the right consistency 
White Cross:
Small Mixing Bowl
Teaspoon
Piping Bag
Cinnamon and Maple Butter: 
100g of Mad Millie Homemade Cultured Butter 
1/2 Tsp of Cinnamon
1/2 Tsp of Vanilla Essence 
1/4 Cup of Maple Syrup 
Cinnamon and Maple Butter: 
Small Mixing Bowl

Step 1: Mix
Add all dry ingredients together in a bowl and mix together (flour, cocoa, culture, cinnamon and chocolate buttons).  
Create a "well" in the middle and pour in butter and water. Mix thoroughly until water and dry ingredients create a sticky, soft dough. 

Step 2: Rise 
Cover the mixing bowl with a very damp muslin cloth. Leave for 24 hours to rise in above 20°C heat. 

Step 3: Fold and Shape
After 24 hours use the dough scraper to get all of the dough out of the bowl on to a well-floured surface. 
Fold outside edges inwards and make into a ball shape. Place the ball shape dough onto a floured sheet of baking paper.
Line a bowl with a muslin cloth then place the baking paper and dough inside the bowl. Cover with the edges of muslin cloth.
Leave for a further 2 hours in a warm place for it to rise. 

Step 4: Oven Prep
Preheat oven to 180°C. Whilst waiting for dough to rise, you can start with mixing up the mixture for the cross on the hot cross buns. For this you need 1/2 cup of flour and a bowl of water. Add 1 Tbsp at a time to get the right consistency. In the end it should be a thick, smooth consistency. 

Step 5: Bake 
Once the dough has risen again, evenly make balls of dough and place on a baking paper lined tray. Shape these into squares. Place cross mixture into a piping bag and draw white crosses on each bun. Once done place in preheated oven. Bake for 35 minutes at 180°C. 

Step 6: Butter 
While waiting for the buns to bake, add 100g of Mad Millie Homemade Cultured Butter into a mixing bowl. Add cinnamon, vanilla essence and maple syrup into a bowl and mix in well. 

Step 7: Sever 
Take buns out of the oven after 35 minutes and rest for 20 minutes. After 20 minutes cut in half and serve with cinnamon and maple butter.
