Quinoa & Chickpea Salad Jars

Who else uses this trick to pack a salad for lunch? It's perfect for those busy days on-the-go when you want to stay healthy too. Here's the perfect way to make a delicious salad and avoid soggy lettuce. 

Step 1: The first is the most important step, salad dressing FIRST! This guarantees your salad will not get soggy, 
Step 2: Add a layer that will stop your liquid from wetting your salad. A grain would be prefect. I've added quinoa to one jar and chickpeas to my other Jar. 
Step 3: Start stacking your jar with the ingredients that fit your taste buds. 
Step 4: Finally add your lettuce, lettuce is always LAST! 

Salad Step by Step

Quinoa Salad
Salad Ingredients

1/4 Cup Quinoa 
2 Tbsp Grated Carrot
6 Cherry Tomatoes
100 g Mad Millie Mozzarella
1/4 Cup Dandelion Greens (Lettuce)
1/4 Avocado Citrus Dressing
 
Dressing Ingredients:

1/2 Avocado
1/2 Whole Jalapeno
1/4 Cup of Apple Cider Vinegar
3 Tbsp of Fresh Lime Juice
1 Clove of Garlic
1/4 Cup of Coriander
1/4 Cups of Water
1/4 Tsp of Salt
Pinch of Black Pepper 
 
Salad Equipment:

1 L Glass Jar
Chopping Board
Knife
Serving Bowl
Measuring Spoons

Food Processor
Measuring Spoons

Step 1: Make the dressing by placing all ingredients into a food processor and mix for 2 minutes. If consistency is too thick add more water. 
Step 2: Grab  your glass jar and pour dressing in first so it sits on the bottom.
Step 3: Layer the jar by adding quinoa, carrot, tomatoes and mozzarella followed by the lettuce. 
Step 4: Leave in fridge 'til lunch. 
Step 5: When ready to serve, get a serving bowl and the salad jar. 
Step 6: Tip jar upside down into the serving bowl so all the ingredients fall out nicely with the dressing on top.
Step 7: Enjoy!
 
Chickpea Salad
Salad Ingredients:

1/4 Cup Chickpeas
1/4 Cup Cucumbers
1/4 Cup Green Capsicum 
50g Mad Millie Feta
1/4 Cup Rocket Salad 
1/4 Mint Yoghurt Dressing 
Mint Yoghurt Dressing Ingredients:

1 Cup Greek Yoghurt
1/2 Cup of Finely Chopped Mint Leaves
2 Cloves of Garlic Minced
1 Tbsp of Lemon Juice
1/2 tsp of Ground Cumin
1/2 tsp of Cayenne Pepper
Pinch of Salt and Pepper
 
Salad Equipment:

1 L Glass Jar
Chopping Board
Knife
Serving Bowl
CupsMeasuring spoons

 
Dressing Equipment:

Bowl
Measuring Spoons
Measuring Cups

Step 1: Make the dressing by placing all ingredients into a bowl and stir. Leave it to sit for 30 minutes. 
Step 2: Grab your glass jar and pour dressing in first so it sits on the bottom.
Step 3: Layer the jar by adding chickpeas, cucumber, capsicum and feta followed by the rocket salad. 
Step 4: Leave in fridge 'til lunch. 
Step 5: When ready to serve, get a serving bowl and the salad jar. 
Step 6: Tip jar upside down into the serving bowl so all the ingredients fall out nicely with the dressing on top.
Step 7: Enjoy!
