Zucchini and Mad Millie Halloumi Fritters

Ingredients: 
4 Medium Sized Zucchini
200g Mad Millie Halloumi 
1 Lemon
2 Tbsp of Basil 
1 Tbsp of Coriander 
1 Tbsp of Mint 
3 Eggs 
1/4 Tsp of Salt 
Freshly ground Black Pepper
1 Tbsp of Butter
Equipment: 
Cheese Grater
Tea Towel 
Mixing Bowl 
Mixing Spoon
Fry Pan

Step 1: 
Grate 4 zucchinis and place on a tea towel. Using your tea towel wrap up grated zucchini and tightly squeeze out as much excess water. Place in mixing bowl. 

Step 2: Grate halloumi and add in mixing bowl with grated zucchini. Grate lemon zest and add in mixing bowl. Proceed to add chopped herbs, eggs, salt and pepper, and mix together well. 

Step 3: Heat pan and add butter. Add 3-4 tablespoon of mixture into frying pan for 1-2 minutes on each side or till golden. 

Squeeze lemon over just before serving. Great with a crisp green salad.
