Berry and Ricotta Tarts

Made some Mad Millie Ricotta recently? How about using your ricotta to make some delicious Berry and Ricotta Tarts. They not only look amazing but taste delicious too. As Mad Millie Ricotta is so quick and easy to make, these tarts are perfect as a last minute dinner party dish. Have a go and impress your family and friends!

Ingredients

  • 2 sheets ready rolled sweet short crust pastry
  • 250grams of Mad Millie Ricotta
  • ¼ castor sugar
  • Zest of 1 lemon
  • 2 eggs
  • ½ cup berry jam
  • Icing sugar

Method

  1. Preheat oven to 165°C and cut pastry into rounds to fit a small tart tray.
  2. Beat the ricotta, sugar, lemon and eggs together.
  3. Fill each pasty shell with the ricotta mixture and top with berry jam (Alternatively mix the berry jam into the ricotta mixture)
  4. Bake for 40 minutes on fan bake
  5. Dust with icing sugar when cool.

To make a citrus tart: Omit the berry jam and replace with the zest of one lemon and one orange.
