Preserved Poached Spiced Pears

Whilst many of us may not have the luxury of having rambunctious fruit trees with a wealth of ripe fruit, in our back yard, seasonal fruit can still be purchased at a better price when in season and preserved for winter months. I absolutely love poached spiced pears, either on my muesli for breakfast, or for a healthy  dessert with some Mad Millie probiotic yoghurt.
 
Ingredients:
  • 7 - 8 pears (I used Anjou pears)
  • 1 lemon
  • 2 cinnamon quills
  • 1 cardamom pod
  • 1 star anise
  • 1 vanilla bean (split and scraped)
  • 2 cups of sugar
  • 4 cups of water

Method:
  1.  Peel and de-core your pears and cut them into quarters, before placing them in a bowl of water with a squeeze of lemon juice (this ensures they do not begin to brown before processing)

  1. Once the pears have been brought to the boil, fill 4 sterilized Mad Millie 350ml preserving jars, ensuring the pears are completely covered with sugar syrup.  Finish by proccessing the jars in the water bath canner for 20-25 minutes.

  1.  To make your spiced light sugar syrup (it truly is light compared to other recipes), place the water sugar and spices into a pot and bring to the boil. Once the sugar syrup is boiling place your pears in the syrup and allow time to bring it back to the boil.

5 minutes processing time??? Is that enough? Most preserving sites say 20-25min. Is this meant for preserves u r going to eat right away and refrigerate ? Like that your syrup recipe isn't teeming w the sugar that most are...thanks!
