Tips to making delicious Mad Millie Mozzarella

Tip 1: Stretching

The trick to making really good mozzarella is in the stretching. You want it to stretch until it is smooth and elastic but you should never force it! The more gentle and patient you are, the more you will be able to retain all the fats in the milk which mean you will get a beautiful, soft and creamy outcome. If the mozzarella isn’t stretching well, put back in the hot water, or try heating up your water a little hotter.

Tip 2: Folding

Mozzarella is all about the texture, so when you are stretching it, fold it over each time before stretching it again the other way. This way you build the layer upon layer texture which makes fresh mozzarella so special and delicious to bite into.

Tip 3: Forming a Ball

Once you have a smooth, soft and shiny texture- start gently shaping it into a ball by rolling the edges underneath, and shaping with your hands. Your mozzarella will still be very soft, so plunge it into a bowl of ice cold water once you have your desired shape.

Tip 4: Presenting your Mozzarella

Artisan food is like art. Once you have your beautiful ball of fresh mozzarella, it is time to dress it up! You can arrange it with tomatoes and basil or cut your mozzarella up in to slices to make a delicious Caprese Salad. A Caprese Salad is a great way to eat fresh mozzarella. The tomato and basil gives a beautiful contrast and a lovely fresh flavour to accompany the cheese. You should try to make your mozzarella fresh on the say for the best taste and texture (Italian’s will only eat Mozzarella which has been made fresh the same day). Serve with salt, pepper, olive oil and some crusty sour-dough bread as an entrée or a delicious lunch.
