Why is my milk not setting?
This could be due to a few reasons:
1. Too little rennet was used (if using goat's milk, double the rennet required).
2. Your rennet is expired or has deteriorated due to incorrect storing conditions.
3. Your thermometer reading was incorrect, milk temperature is too low or too high.
4. Rennet activity was destroyed by diluting the rennet with warm or chlorinated water. Always use unchlorinated, cool water.

What happens if I don't get a clean break?
Leave the curd a little longer, and see if you can get a clean break then. Check your rennet has not expired. If rennet has expired, the milk may take longer to coagulate, and you may find you have to wait longer. It is difficult to proceed without a clean break and strong curd.

How long can I store my feta?
If stored in oil (we suggest vegetable oil, olive oil has a strong taste, but if you like it go for it) then it can last for up to 3 weeks. If stored in a salt brine (be aware your cheese will get saltier the longer you leave it) then 1-2 weeks. You can also store it in its own whey with salt which lasts a bit longer than normal brine.
