Creamy Broccoli Soup with Goat's Feta

With winter chills and wet days, a comforting soup ticks all boxes.
This recipe is thick and flavourful, not to mention quick to make and one to enjoy!Ingredients:

150g of Butter 1 Diced Onion 2 Cloves of Garlic Crushed 3 Cups of Chicken Broth 2 Broccoli Heads 4 Tbsp of All Purpose Flour 2 Cups of Cream |
400g of Mad Millie Goat's Feta Steamed Asparagus (amount dependent on preference) Fresh Basil Leaves Salt & Pepper to taste |
Step 1: Melt 50g of butter in to a large stock pot, sauté onion and garlic until tender.
Add broccoli and broth, cover and simmer for 10 minutes.
Step 2: Use a stick blender and puree the soup in the cooking pot. Alternatively, if you only have a blender pour the soup into blender, this may only be 1-2 cups depending on the size of your blender. Blend until soup turns to puree.
Step 3: In a small sauce pan, over medium heat melt 100g of butter, stir in flour and cream. Stir until thick and bubbly then transfer this into the soup. Season with salt and pepper.
Step 4: Pour soup in a bowl to serve and garnish with steamed asparagus, basil leaves and homemade Goat's Feta on top.
