Raw Chocolate Coconut Yoghurt Cheesecake

What a great week it’s been with the release of our new product - Coconut Yoghurt Kit 
To celebrate we’ve created a raw, gluten free cheesecake using the Chocolate Coconut Yoghurt recipe from this kit. And...because your're using coconut yoghurt, it is full of live probiotics, meaning you don't have to feel guilty about this cheesecake one bit!

Ingredients

Base 
1 1/2 cups of cashew nuts 
3/4 cup dessicated coconut 
1/2 cup coconut oil 
1/3 cup brown sugar 
1 tbsp lemon zest 
1 1/4 ground almonds

Filling 
Mad Millie's Chocolate Coconut Yoghurt 

Topping
Desired amount of:
Blueberries 
Coconut chips 
Dark Chocolate Flakes
 

Method: 
  1. Make your Mad Millie Chocolate Coconut Yoghurt at least 1 day before.
  2. Line a 20 cm diameter spring cake tin with baking paper.
  3. Put all base ingredients (except for coconut oil) into a food processor and process into a fine crumb. 
  4. Transfer the crumb into bowl and create a well in the centre. Pour in the coconut oil and mix together. 
  5. Press crumb into the lined cake tin until it is fairly firm. Place base in the fridge to set for 1 hour. 
  6. Remove base from fridge and spoon Mad Millie Chocolate Coconut Yoghurt on to the base. NOTE: the chocolate coconut yoghurt will naturally be a little thicker than standard coconut yoghurt so will have a similar consistency to cheesecake filling - but without all that cheese!
  7. Smooth and even out yoghurt on top of the base. 
  8. Decorate with your choice of ingredients. We used berries, dessicated coconut and chocolate. 

IMPORTANT NOTE: 
Our yoghurt culture contains dairy, but the amount of dairy is very small, this recipe contains less than 0.1% of dairy.
