Salted Caramel Banana Oats with Kefir
This recipe developed by @seedlyfood will get your taste buds buzzing! A delicious breakfast idea that tastes so good you would think it would be bad for you, but it's not! The dates cooked with the porridge give a beautiful caramel flavour, while the sunflower seeds give some texture and crunch. Don't even get us started on how the fried bananas top this all off. This delicious brekkie could also go down well as a sweet treat at any time of day.
1 tbsp coconut oil
1/2 cup rolled oats
1/2 cup water
1/4 tsp salt
4 dates, chopped
2 tbsp sunflower seeds
Half a banana, sliced in two long halves
1/4 cup Mad Millie Kefir (soy or regular)
2 tbsp Mad Millie Coconut Yoghurt
A pinch of cinnamon
1. Add oats, dates, and sunflower seeds to the pot with water. Cook for about 5 minutes.
2. While oats are cooking, quickly fry off the banana slices in 1 tbsp coconut oil until browned on each side.
3. Once cooked, pour porridge into a bowl, top with banana slices, kefir, a sprinkle of cinnamon, and a few dollops of coconut yoghurt or cream.
